Safety stock is the extra quantity you keep beyond expected demand to cover a sales spike or a late delivery without running out.
A rough rule is a few days of sales for reliable suppliers and a week or more for unreliable ones. Too much safety stock ties up cash; too little turns every late truck into an empty shelf.
